Summer is here, and what are the most appropriate drinks for coffee lovers? Of course! Iced coffee! Most people want to enjoy their summer, basking under the sun and enjoying their time at the beach with summer drinks in hand. Others may prefer some refreshing lemonade and fruit juices, but many would still want to have coffee. But coffee is usually hot and inappropriate for the summer heat. Thus, we level it up to iced coffee, so everyone can enjoy the taste of coffee, even on a hot summer day. 

We have here eight recipes of summer coffee drinks that you will surely enjoy.

Thai Iced Coffee

Let’s start with an exotic summer iced coffee, Thai iced coffee. This exotic summer drink is made by combining spices, iced coffee, and some condensed milk. If you are missing traveling, this is the right coffee for you.

What you’ll need:

  • 9 oz Cappio Cold Brew Coffee.  
  • 1 dash Cardamom Bitters
  • 1 dash Almond Extract
  • 1 dash Ground Cinnamon
  • 1 oz Sweetened Condensed Milk

How to do it:

  1. Gather all ingredients in one glass and mix.
  2. Get a strainer and transfer the mixed coffee into a glass with fresh ice.
  3. Enjoy!

Lemonade Iced Coffee

Let us have two kinds of drinks in one glass. Lemonade is a refreshing drink on its own, but when combined with ice coffee, the experience becomes different. The tartness of the lemons and subtle sweetness of the sugar adds a nice tang to what is originally dubbed as just cold brew.

What you’ll need:

  • Cappio Cold Brew Coffee
  • sugar
  • water
  • lemons
  • mint leaves (optional)

How to do it:

  1. Prepare a 1:1 ratio of simple syrup.
  2. In a glass, add some cold brew.
  3. Squeeze out some fresh lemon juice and add that to the glass.
  4. Add about two tablespoons of the simple syrup to the mix and blend.
  5. Add fresh ice and garnish with sliced lemon and mint.

Iced Bulletproof Coffee

This coffee drink may sound threatening, but for sure, this is one of the best coffee you can have, especially when it becomes difficult to focus on work while thinking of summer vacations you can have. This summer coffee drink will keep you energized throughout your day.

What you’ll need:

  • 2 tablespoons freshly ground coffee beans
  • 3/4 cup (6 ounces) water
  • 1 tablespoon grass-fed unsalted butter
  • 1-2 teaspoons MCT oil
  • 1/2 teaspoon pure vanilla extract
  • 1 scoop collagen peptides, optional
  • ice, for serving

How to do it:

  1. Brew the coffee using a pour-over, automatic machine, or French press.
  2. Pour the freshly brewed coffee, butter, oil, and vanilla extract into a blender—if using collagen, add a scoop now. Blend for 1 minute, or until slightly frothy.
  3. Serve over ice.

Note: This coffee needs to be drunk immediately since it contains butter. It can harden when left refrigerated to chill.

Fresh Mint Iced Coffee

What you’ll need:

  • 2 tablespoons sweetened condensed milk

  • 1 oz Kahlua
  • ice

How to do it:

  1. Pour sweetened condensed milk into a highball glass.
  2. Add cooled coffee and Kahlua, and stir well to combine.
  3. Add ice and enjoy!

Coconut Caramel Cold Brew

What is summer without coconuts? Coconut is a symbol of summer, and coffee is also a necessity. Try out a new recipe that you may not have tried before. Coconut, coffee, and caramel is an interesting combination.

What you’ll need:

  • 1–2 cups Cappio Cold Brew Coffee
  • Handful of ice
  • 1–2 tablespoons coconut milk
  • 1–2 teaspoons caramel syrup
  • Pinch of sweetener of choice (if desired)

How to do it:

  1. Prepare your cold brew coffee in a carafe or pitcher and keep it chilled in the refrigerator.
  2. Pour a cup of coffee into a glass of your choice, filled with ice.
  3. Add in the coconut milk and caramel syrup. Add also sweetener if desired.

Cinnamon Ice Cube Coffee

How to do it:

  1. Pour your coffee into an ice cube tray.

Iced Ube Latte

What you’ll need:

  • 16 oz almond milk
  • 16 oz coconut milk
  • 16 oz rice milk
  • 2 teaspoons cinnamon
  • 1/4 cup sugar
  • 3 teaspoons ube extract
  • crushed ice
  • espresso

How to do it:

  • In a large pitcher, add your almond, coconut, and rice milk. 
  • Whisk together the ingredients vigorously while slowly adding in the cinnamon and sugar.
  • Continue mixing so that no clumps will form.
  • Add the ube extract and mix until everything is combined. Keep the ube horchata in the refrigerator until ready to serve.
  • Fill your serving glass with crushed iced and pour the ube horchata until it is almost full.
  • Top your drink with a shot of espresso and serve.
  • Enjoy your purple coffee drink!
